RECIPE

Conserverie Gonidec is the last remaining sardine factory in the famed and picturesque harbor of Concarneau, keeping alive the know-how and traditions of the town's fish canning industry. Fish are caught on day-boats, just off the coast of Brittany. They are unloaded and brought to the cannery during the night and then processed early in the morning. After being sorted by size, they are put into frying trays and then cooked according to a special recipe before being packed by hand into individual tins in order to maintain freshness and quality.

Crispy sardines in olive oil:
- Lay a puff pastry sheet out flat; cut into 4 squares
- In the center of each square, layer chorizo, 2 sardines, a slice of red tomato and a very thin slice of lemon
- Fold each square into a triangle
- Fry in hot olive oil 1 min. on each sideServe with fresh mixed salad
