Pastry-makers in Lorraine compete with ingenuity to offer children countless kinds of gingerbread (pain d’épices) come Christmastime.

In Nancy for example, the Maison des Soeurs Macarons and its celebrated pastry chef Nicolas Génot concoct a delicious traditional gingerbread shaped like Saint Nicolas.

At Moulin de Nomexy, near Epinal, Guillemette has a secret: a gingerbread mix that’s already prepared – all you have to do is add eggs, honey, and butter! A lovely image of Epinal and the recipe are printed on the package. The mix is sold on their Web site: www.moulindenomexy.fr

With Nadia Sutter of the Hulot patisserie, gingerbread is designed by artists and presented in a rectangular shape. Their gingerbread is made exclusively from a mix of three local honeys. And since the Hulot patisserie leaves nothing to the ordinary, the charms hidden inside their kings’ cakes are also designed. This year, it’s a group of students from the Lycée Loritz in Nancy who created them.
