Like little pastel fragments of the rainbow, there is nothing as powerful as macarons to conjure up the beauty of French cuisine. Whether in the blush of rose, richness of chocolate, or dusty green of pistachio, macarons are always round, always delicate, and always better by the pair (or in a set of 4 or 6, for the really hungry).

Name: Macaron

Origin: Contrary to what you may have heard, these beauties aren’t just from the Champs-Elysées. Macarons are originally from Nancy in Lorraine.

Fans: Literally everyone, from Pharrell Williams to Marie-Antoinette (or, at least in Kirsten Dunst’s version)

Time: Anytime, but particularly the International Day of Macarons, March 20

Signs of quality:

  • A fine crust, without any cracks

  • A good visual balance between the cookies and the filling

  • A texture that’s crispy at first, then soft and mellow

  • Intense flavor
