Salmon Chutney

INGREDIENTS

SERVES 4 - 6

  • 650 g fresh salmon fillets, skinned and cut into large dice
  • ½ cup olive oil
  • 450g good quality tomato passata (suggest using @Bittongourmet Tomato Sauce)
  • 1 Spanish onion, peeled, cut into eighths
  • 3 garlic cloves
  • 2cm piece ginger, peeled
  • 1 red birds eye chilli, roughly chopped (or to taste)
  • 1 tsp sea salt
  • 1 bunch fresh coriander, roughly chopped

METHOD

Set your MAGIMIX (External link) Cook Expert on the EXPERT programme (External link) , 12, no heat for 1 minute, lid off. Place the onion, garlic, chilli and ginger into the bowl and run the programme.After 30 seconds, pause the programme and scrape down the sides of the bowl. Continue until finished.

Scrape down the sides of the bowl again, add the olive oil and set your EXPERT to 1A, 120 degrees C, 5 minutes and run, lid off.

Meanwhile place the salmon dice onto the small steamer plate.

Add the passata and salt and set your EXPERT to 1A, 120 degrees C for 14 minutes and run with the lid on. After 5 minutes, pause the programme place the steamer plate on top with the salmon pieces on it. After a further 8 mins, pause the programme again and carefully tip in the salmon pieces into the sauce (noting that the salmon pieces will continue to cook in the sauce) and add the coriander. Continue running the programme to the end.
Serve with rice or crusty baguette.
