Restaurant L'Esprit du Vin, with Chef David Enjalran

This restaurant is located in Albi's Cité Épiscopale, a UNESCO World Heritage Site, and is up there with France's very best restaurants, obtaining a Michelin star in 2006. Enjalran's approach to cooking focuses on produce, quality and his producers' methods.
